When in the dough mixing mode, the mixing impeller is driven at a continuous speed in the range of about 1,400 to about 1,600 rpm and preferably form about 1,400 rpm to about 1,550 rpm. When in the other mixing mode, the impeller is driven at a speed in excess of 1,600 rpm.
