AbstractA reconstituted fried and puffed product is prepared by moisturizing particles of animal parts which are high in collagen and at least 50% of which are rendered parts, gelatinizing the particles in an extruder, extruding a strip of the gelatinized material, cutting the strip to pellets, drying and deep-fat frying the pellets. The particles must have moisture contents between 18% and 35%. The extrudate must be cooled prior to expelling from the die. The pellets must have a dimension of 1/4 inch or less to insure proper puffing. The starting material may come from any high collagen, animal or fowl part. | InventorAssigneeApplicationNo. 05/734967 filed on 10/22/1976US Classes:426/641, Animal derived material is an ingredient other than extract or protein426/104, IMITATED, SIMULATED, ORNAMENTAL, THREE-DIMENSIONAL PRODUCT OR CONFECTIONARY PRODUCT HAVING CHILD-ORIENTED UTILITY426/440, To puff or form pore426/456, And subsequent heat treatment of dehydration426/516Extruding through restricted orifice to give desired final shapeField of Search426/104, IMITATED, SIMULATED, ORNAMENTAL, THREE-DIMENSIONAL PRODUCT OR CONFECTIONARY PRODUCT HAVING CHILD-ORIENTED UTILITY426/576, Gelatin or derivatives426/641, Animal derived material is an ingredient other than extract or protein426/440, To puff or form pore426/448, From extrusion zone using mechanical pressure426/456, And subsequent heat treatment of dehydration426/516, Extruding through restricted orifice to give desired final shape426/517, Forming rod, strand, sheet, or filament426/289, APPLYING DIVERSE EDIBLE PARTICULATE SOLID TO COAT OR IMPREGNATE A SOLID CORE, I.E., SURFACE COATING OR IMPREGNATION426/417, Preparing or treating triglyceridic fat or oil, or processes of separating triglyceridic fat or oil from a starting material, e.g., rendering, etc.426/441, Including water treatment426/438, Heat treatment of food material by contact with glyceridic fat or oil, e.g., potato chip frying, etc.426/392Packaging or treatment of packaged productExaminersPrimary: Yoncoskie, Robert A.Attorney, Agent or FirmUS Patent References2547747, 2907660, 2947635, 3401045International ClassesA23L 1/31 (20060101)A23L 1/312 (20060101) A23L 1/317 (20060101) |
